Paleo Bread RECIPES

I’ve been experimenting with making Paleo bread lately. Not because I’m following a paleo diet but because I was looking at alternative bread solutions that provided lots of nourishment and made me feel fuller for longer, and tasted great. This is also a gluten free recipe too so may be great for people wanting to avoid gluten.

I have found a great base recipe which which I start with and then get creative by adding all different types of ingredients to make different flavours. I will share this base recipe with you and then I will post the different flavours I come up with.


 

PLAIN PALEO BREAD (BASE RECIPE)

INGREDIENTS

  • 150g Almond meal

  • 50g Coconut flour

  • 6 Tablespoons Psyllium husk

  • 1 Tablespoon Baking powder

  • A few good pinches salt

  • 12 eggs, lightly beaten

  • 1 1/2 Tablespoons Apple cider vinegar

  • 120ml Extra Virgin Olive Oil

METHOD

  1. Preheat oven 140 degrees Celsius. 

  2. Line a loaf tin with baking paper, bottom and sides. 

  3. Mix all dry ingredients in one bowl. 

  4. Mix all wet ingredients into another bowl.

  5. Add wet ingredients into dry ingredients and mix together. 

  6. Pour into lined loaf tin.

  7. Bake for 1h 20min. 

  8. Remove from oven and allow to cool a bit before turning out onto a wire rack. 

  9. Slice the loaf and store in an airtight container in the fridge for up to 5 days. Can freeze for up to 3 months in freezer. 


CHEESE & ONION - PALEO BREAD

INGREDIENTS

Use the above Base recipe to start.

Add into the dry ingredients:

  • 1 1/2 Tablespoon onion powder

  • 1 1/2 Tablespoon mustard powder (or you could add mustard sauce to the wet ingredients)

Add into the wet ingredients:

  • 125g Grated parmesan cheese

METHOD

Once you mix the wet and dry ingredients together and pour the mix into the loaf tin, sprinkle with more cheese and chopped spring onions.


SPICED FRUIT & NUT - PALEO BREAD

INGREDIENTS

Use the above Base recipe to start.

Add into the dry ingredients:

  • 2 Tablespoons mixed spice

  • 2 Tablespoons cinnamon

Add into the wet ingredients:

  • 3/4 Cup dried fruits. I used cranberries, goji berries, premium sultanas.

  • Small handful of nuts. I used almonds.

METHOD

Once you mix the wet and dry ingredients together and pour the mix into the loaf tin, sprinkle with a few dried fruits and nuts.
